The Languedoc Rabbit Family
The Languedoc Rabbit Family Range
Since 2012, French Spirit Production has been producing Rabbit Family wines in the South of France, offering distinctive cuvées with clear personalities and an accessible style for every occasion — from a festive table to a quiet evening at home.
Our wines come from some of the Languedoc’s most beautiful terroirs. The vineyards have been carefully maintained for generations, with the utmost respect for nature, using low-impact products and environmentally responsible production methods.

Mediterranean by Nature
Quality begins in the vineyard. The grapes are carefully tended throughout the growing season and handled gently to avoid bruising. In the cellar, modern equipment supports precise winemaking. Ecova lightweight glass bottles, recyclable cartons and recyclable corks reduce the range’s environmental footprint.
The Languedoc’s hot, sunny summers are balanced by irregular rainfall and maritime influence. Soils rich in rounded pebbles absorb heat by day and release it at night, while helping rainwater reach the vine during dry periods. The Mistral dries the grapes and limits humidity, naturally reducing the need for treatments and helping preserve local wildlife — including the rabbit that inspired our family.

The full-bodied Rabbit Family wines — What is so special about these 3 Rabbits?
Time is the key to creating a full-bodied, concentrated wine, and choosing the right harvest date is an art. The grapes are hand-picked at perfect maturity — when flavour, sugar and phenolic ripeness are in balance — thanks to a detailed understanding of each vineyard, its terroir and the local climate.
These premium single-varietal wines are naturally concentrated and may reach 15–15.5% alcohol in warmer vintages. Rather than “late harvest”, we call it harvesting at perfect maturity.
In the cellar, long skin maceration, temperature-controlled fermentation, pigeage and remontage extract deep colour, ripe aromas and structure. Each wine is then aged for 9 to 12 months in French or American oak, selected according to the grape variety and vintage.
The result is a powerful yet nuanced range with generous fruit, subtle oak and a long finish — ideal with red meat, game or mature cheese.
